I am having a huge headache as I am experiencing caffeine withdrawal syndrome trying to change my usual coffee routine to green tea madness (let's see if I will last a week). Anyway, my eldest daughter made this --and all I have to do is dance around the kitchen to the tune of Lady Gaga's Bad Romance while supervising her....
Who doesn't have left over bread and ham in the fridge? Well -- stop staring at them and start cooking this one! I hate leftovers and I am stuck with 3 more bags of ham slices from Christmas so this recipe is perfect for me. Something old...now it's all brand new!
Mario Batali's version: Page 132
Maria B's eldest daughter's version:
We skipped on the 1/2 tsp of freshly grated nutmeg. Also Mario separated the eggs and beat the whites to a froth and used them as part of the coating - -well -- too much work, so we just tossed the eggs all at the same time and used plain bread crumbs as the coating.
FOR THE DUMPLINGS:
5 pcs of day old dinner rolls
1 cup milk
4 large eggs
1 cup ham (Mario used prosciutto)
1 cup grated parmesan cheese (Mario used parmiago reggiano -sorry we ran out)
1/4 cup italian parsley
salt and pepper
1 cup bread crumbs (store bought)
1/2 cup extra virgin olive oilFOR THE BROTH :
6 cups chicken stock
1/2 onion, diced
1 tbsp garlic, minced
2 tbsp extra virgin olive oilHERE'S HOW:
- In a bowl, combine milk and bread. Let sit for 10 minutes.
- In a separate bowl, lightly beat eggs
- Squeeze excess milk from bread and place egg. Add prosciutto, cheese, parsley, salt, pepper and bread crumbs.
- Form mixture into balls and roll on breadcrumbs spread on a plate
- Fry the balls in olive oil until golden brown on bot sides. Set aside
- Meanwhile, create broth by cooking onion, garlic in 2 tbsp olive oil. Add chicken stock and let it boil for 3 minutes
- Divide the dumplings into soup bowls and pour broth over them.
- Serve

Great tip! I love scrambled eggs too, but have never considered adding cream cheese. Your eggs look perfect!
