I'm breaking into the soup section! Why oh why didn't I see this recipe when zucchini is abundant during summer - -oh well. It's getting colder everyday and for the past few days light dinners accompanied by freshly baked FOCACCIA BREAD and cheese on the side is the favorite in this house.
This is the first time I am using marjoram as the main herb and I love the result. In the original recipe, Mario boiled the veggies and herbs in the pot for 20 minutes, dropped the bread (which is soaked in water and then dried them by squeezing the excess water) and it's good to go. In my version, I cooked the garlic and onion in olive oil until golden brown and added the veggies until it's tender before placing the water.
I'm planning a pre-Christmas bash for my staff and maybe I'll consider this soup as a starter..I need to make a list....
As always, I prefer the pureed version.....

INGREDIENTS:
1 1/2 cup chopped mixed herbs( I used a combination of fresh italian parsley/ marjoram and 1 tbsp of dried thyme and 1 tbs of dried marjoram)
2 medium zucchini, cubed
1 cup green beans
3 potatoes
1/2 onion
1 tbsp minced garlic
8 cups of water
salt and pepper
2 slices of old bread (I used my leftover on homemade FRENCH BREAD)
1/2 cup extra virgin olive oilHERE'S HOW:
- Cook garlic and onion in olive oil
- Add all herbs, vegetables and water and let it boil for 20 minutes
- Meanwhile soak bread in water and squeeze to get rid of excess liquid
- Crumble the bread and add it to the soup
- Season with salt and pepper
- Ladle the soup into bowl (or place in blender for the pureed version)
