Mario , that's a tip for you on your next cookbook -- make sure you add notes where you are recommending pairs for clueless non italian mom like moi, okay?
So, his veggie section has lots of peppers, asparagus that we don't eat -- but hmmm..so happy that you have this potatoes as anything with garlic - -hubby loves!

It is important that you blanch the potatoes in boiling water for 2 minutes. Again - -don't cook fully - -just blanch! I will add this to our favorites. It only took me less than 5 minutes to prepare and I let the oven do the magic - No more french fries in this house!
5 potatoes, cut into cubes
1 head garlic, crushed but not peeled
2 tbsp dried rosemary (finely chopped if you are using fresh rosemary)
1/4 cup extra virgin olive oil
salt and black pepperHERE'S HOW:













Can't go wrong with that combo! I looove garlic. I get a little panic attack when we're running low ;)
