Hungry teens craving for sushi lunch today - - good thing I was able to convince them to try mussels (this soup and SPAGHETTI WITH MUSSELS, CHILES AND MINT: Maccheroni alla Chitarra ) from the book. This took us less than 15 minutes to make as I skipped the process where Batali wants me to drain the cooked mussels, place it in the fridge to chill for a few minutes -- then finally, pour the hot soup on top of the cold mussels. Duh ! We're hungry! But it's so yummy.... such an easy fix and so tasty!

1 lb mussels
1 cup white wine
saffron threads
1 onion
3 springs italian parsley
dried thyme
1 bay leaf
freshly ground pepper
1tbsp extra virgin olive oilSTEP 1: Dissolve saffron in wine. Combine mussels, onion, parsley, thyme, bay leaf, pepper, olive oil and wine and bring to a boil. Cover and cook until all mussels have opened
